How does Michael Pollan's 'The Botany of Desire' use the term "Alchemy" ?

Pollan sees the transformation of a small seed in a pile of pig waste, how a chicken can eat insects and produce delicious eggs and cows eating rubbish and making milk, all like magical transformations, just as Alchemist did with base materials into precious metals.
